Yes, the craving for soup has been on my mind. As I thought about it though, it just seemed a bit "off-season" for hot soup. Perhaps my eagerness to see Fall arrive and the pre-season football games this week enticed me even more. 

Finally, I could stand it no more! LOL Out came the slow cooker and in went the ingredients, alas---there was a delicious soup and yes, it looked irresistible!

I enjoyed TWO bowls of the chicken and vegetable soup and I must say, it was absolutely delicious, nutritious, and a pure enjoyment of comfort foot. Maybe my body knew, I NEEDED that and NO---it's not out of order to have hot soup in August. 

Thank you for reading my blog posts. I used no certain recipe, just put pre-cooked chicken, veggies, and broth together in in slow cooker, cooked on low, and then ate with a few saltine crackers.

Amazing Healthy Veggie Rice

Healthy, Healthy Veggie Rice


Amazingly Healthy Rice

As you know, I try to pack nutrition into simple meals. Today was no exception.

For the rice:

In rice cooker, add

1 cup dry rice

1 1/4 to 1/2 cup orange juice

1 cup water

1/2 T. coconut oil

1 t. curry powder

Then add items below to a FOOD PROCESSOR
1/2 head cauliflower, washed
1/2 yellow squash, washed

1/4 onion

1/2 bunch kale, washed

Chop to consistency desired but I finely chopped the mixture

Add this to the rice cooker and cook WITH the rice, juice, water mixture. When done, add seasonings of your choice. Thank you for reading My Food Diary. I do this blog to keep up with what I eat, for medical purposes--my choice.
I used the slow cooker to cook the chicken breast. Added frozen chicken breast, a couple slices of onion, and a little water. I just prefer adding a little water or broth.

Serving of canned beets, plain with nothing added, except black pepper. I wanted about 4 Ritz Crackers instead of bread, so I added those to the plate. LOL
I can tell you that this meal is delicious and packed with nutrition.

Sneaky broccoli, mixed veggies, and tuna

Sneaky Veggies! Sometimes, I almost have to even fool myself. LOL I try to encourage myself to "play around" with food and therefore eat healthier. 

I cooked the rice and frozen veggies together in a rice cooker. I chopped usual onions, etc. to add to tuna. I also chopped a little bit of fresh broccoli to sneak in a little more nutrition.

Squash Surprise in Salmon Croquettes

I wanted a very light lunch today. Light is better than no lunch at all, right? :) 
I sometimes crave salmon.  I figure my body needs it and salmon is one of the recommended foods for good, healthy nutrition. 

Today, I decided to add a little extra nutrition. I added raw, chopped, yellow squash, onion, and a small amount of flour to a can of drained salmon. I did not add egg to this.

I then, coated with a mixture of home-made crumbs, pan fried on top of stove with only a very small amount of spray olive oil. Great taste, easy, nutritious and a great, light meal. I ate with baked beans with no additions except ground black pepper and a shake or two of seasoning flakes. Added no salt to anything. More photos below of the process. 

Oh, next time, I'm adding MORE squash. Loved it and it worked great!

Chop onion and squash in a food 
processor. Add to bowl with a can of salmon. Add just enough flour to make patties hold shape. Mix well. I did not add egg.



Form patties, coat both sides with crumbs. Pan fry, stove-top with very small amount of spay olive oil.


A can of salmon will usually make up to 6 croquettes.
 Serve with your choice of food. I used baked beans for a light, filling meal.

*I keep this food diary for medical purposes, my choice. I share to give ideas to people that do not like complicated meals that take all day in the kitchen and also with budget in mind. Just saying. :)

Nutrition On A Plate

Oh, wow! This was good. I had leftover spinach, carrots, rice, and turkey so all I added were the boiled egg, cantaloupe, and strawberries. Leftovers don't have to be unpleasant. Frankly, I didn't want to do a lot of 'cooking' today and this worked out great. 

I placed the leftovers on a plate, warmed in microwave for a couple of minutes, added slices of an egg I boiled, cut the cantaloupe and strawberries into bite size pieces, added to plate of re-heated food. Added seasonings but no salt. Rather easy meal and nutritious. (Better than some meals I've had in my life) 

*I realize my methods of cooking and/or food choices may not be suitable for everyone. I find doing a blog post about my food helps me be aware of what I really do eat and might inspire someone that just don't feel like cooking or eating. I don't fool with all those long, drawn-out recipes.

Fish, Stuffed Bell Pepper, Tomato, Strawberries, and Cucumbers

I try to eat healthy. I am eating healthier than I did. I try different variations of ingredients and/or method of cooking, to add interest and encourage myself to eat.  Conventional methods of cooking will work for anything I prepare but I prefer the easy, simple, quick, and nutritious recipes, as well as appliances that I find accomplish this.

 I baked everything in a Nuwave oven. I started with frozen fish, added raw bell pepper (stuffed with rice, celery, onion, and tomato). I also added a couple of strawberries to the same baking dish and half of a tomato. I baked 10 minutes, turned or at least moved all things on the baking pan. Added sliced onion and baked all another 5-10 minutes. When done, arranged all on a plate and added a few slices of cucumber. Photo below shows baking pan--before baking is started. Yes, it's all baked in one pan at the same time.


*I do not imply that my methods or choices of food are acceptable for everyone. I do know I cook more nutritious things for myself now and that it's very uncomplicated to do.

Fresh Veggie Meal with Chicken

Fresh field peas and some of the okra were cooked in a slow cooker. I added some mixed, chopped onion and bell pepper, and a few new potatoes, too. I started the slow cooker first since this takes longer than the Nuwave Oven cooking. I don't think the Nuwave will cook stuff usually done on the stove top.

 Now for Nuwave ingredients: The chicken was frozen. I placed it on a pan with okra, bell pepper, new potatoes, onion, and a few slices banana pepper. I baked the chicken and veggies on lower rack of Nuwave Oven for 10 minutes, turned oven all of it and then added the onions and bell peppers. Baked an additional 10 minutes.

Cornbread: Mixed cornbread and placed in muffin tin that makes 6 muffins. I baked in toaster oven for about 15 minutes and then in Nuwave Oven, lower rack for 10 minutes. The reason I used toaster oven to start with is that the bread needed to bake a bit and set the top since the NuWave seems to blow the air and this often leads to uneven tops when baking.

NuWave Baked Fish and Veggies

Baked fish and veggies served with lettuce, tomato, and cucumber salad.

 Baked fish and veggies in Nuwave Oven. Baked 10 minutes (fish was frozen), turned everything over and baked 10 minutes more.  I did an experiment with the okra.  Actually, the okra was too big before it was harvested and was not tender to start with.  However, I thought at least I could get a little experience by trying it.  It did not work. Needed be be younger okra and sliced.  I've done that before and it worked.  Oh well, trial and error! LOL

Baked Whole Fish and Veggies

 

Started with frozen fish, baked with veggies (without oil, margarine, or salt) in NuWave Oven (Rapid Air would be the same timing, etc). Turn all over after 10 minutes and bake 10 minutes more. Of course you would need to check that fish flakes and that veggies are tender.

 

*I am not implying my meals are on everyone's diet or best way to cook plan.  LOL  However, I find it healthy, quick, and easy.  Especially nice for a couple, a single person, elderly, or those that prefer fast, easy, and healthy cooking.
