Pineapple Cherry Pizza
Football game today so I wanted "junk food". Decided to prepare a variation of pizza. Yep, gave myself a party! LOL Fast food (baked in NuWave oven), easy cooking, delicious and nutritious, as far as pizza goes anyway. Rather glad I did this. My team lost today. :(   But,  next week, maybe they will win! :)

Healthy, Healthy Veggie Rice


Amazingly Healthy Rice

As you know, I try to pack nutrition into simple meals. Today was no exception.

For the rice:

In rice cooker, add

1 cup dry rice

1 1/4 to 1/2 cup orange juice

1 cup water

1/2 T. coconut oil

1 t. curry powder

Then add items below to a FOOD PROCESSOR
1/2 head cauliflower, washed
1/2 yellow squash, washed

1/4 onion

1/2 bunch kale, washed

Chop to consistency desired but I finely chopped the mixture

Add this to the rice cooker and cook WITH the rice, juice, water mixture. When done, add seasonings of your choice. Thank you for reading My Food Diary. I do this blog to keep up with what I eat, for medical purposes--my choice.
I used the slow cooker to cook the chicken breast. Added frozen chicken breast, a couple slices of onion, and a little water. I just prefer adding a little water or broth.

Serving of canned beets, plain with nothing added, except black pepper. I wanted about 4 Ritz Crackers instead of bread, so I added those to the plate. LOL
I can tell you that this meal is delicious and packed with nutrition.

Microwave baked fish and potatoes, with sliced tomato

Microwave baked fish and potatoes, with sliced tomato. 
As you know, I am all about easy, fast cooking. I am not able to stand in the kitchen stirring things all day. Nothing against those that are interested in gourmet cooking, the longer route around.
I simply placed:
1 piece of fish in glass container 
1 or 2 white or red potatoes, cut in pieces and placed in same container as fish
Added some chopped some green onion and sweet, green pepper, and black pepper
 Topped the glass container with saran wrap (punch a few holes in saran wrap with a fork)
Bake in microwave for about 9 minutes
Test to see that fish flakes easily
Slice tomato, add pepper and other spices of your choice, and serve.
One thing I like about this is that it is not messy, using a lot of containers, and it is quick, easy, healthy (for me), and delicious.

Nutrition On A Plate

Oh, wow! This was good. I had leftover spinach, carrots, rice, and turkey so all I added were the boiled egg, cantaloupe, and strawberries. Leftovers don't have to be unpleasant. Frankly, I didn't want to do a lot of 'cooking' today and this worked out great. 

I placed the leftovers on a plate, warmed in microwave for a couple of minutes, added slices of an egg I boiled, cut the cantaloupe and strawberries into bite size pieces, added to plate of re-heated food. Added seasonings but no salt. Rather easy meal and nutritious. (Better than some meals I've had in my life) 

*I realize my methods of cooking and/or food choices may not be suitable for everyone. I find doing a blog post about my food helps me be aware of what I really do eat and might inspire someone that just don't feel like cooking or eating. I don't fool with all those long, drawn-out recipes.

Tuna Salad and Fiesta Rice, with Zucchini Squash

My Food Diary, kept by choice for medical reasons-shared to help others

Wanted something "lite" today. Decided on tuna salad in bed of lettuce, surrounded by tomato pieces. I had leftover Fiesta rice and zucchini squash. I think this is just what I needed, too. Delicious. So easy and  fast to prepare. Healthy, too. 

If you or someone you know is tired or unable to do long, drawn-out, complicated meals--some of my blogs on food might serve to help you with ideas. Elderly people or people with medical problems sometimes do not "want" to cook or even eat since complicated cooking is not an incentive to even try.

Cool Fruit Salad, Hot Day!

My Food Diary July 12, 2012
Apricots, pears, strawberries, blueberries, and yes, a little lettuce in in the bottom! LOL I did add low fat, bought dressing for this salad. I sprinkled with seasoning--but--no salt. EASY, HEALTHY, QUICK! DELICIOUS! 
I post my food diary for medical reasons. It's easy to go back and see what I really did eat. I share my blogs hoping I might help someone else that might like ideas of easy, quick, simple cooking.
