I was invited to eat out Friday. The meal was wonderful and I enjoyed it a lot. Enjoyed being with three of my family members.  I brought home a plain piece of cheesecake that included a little cup of strawberry topping.  I just LOVE cheesecake! 

Today I decided to "play with my food" and try to decorate the large piece of cheesecake before eating it.  A perfect "canvas" since it was large and so tempting to decorate! Just purely inspiring.

I think it turned out really pretty plus I had fun while doing it.

Oh, oh, oh!  If you look at my food diary blog much---you know I DON"T FRY STUFF! I bake it even though sometimes it looks as though it could have been fried, I can assure you it was not. 
I can't remember the last time I fried (deep fried) anything at all. I save the "fried foods" for eating out, which is not often at all.  Anyway, I was absolutely CRAVING fried foods. The only way to get rid of that kind of food craving is to do it. 

I did do it, two days to be exact! I think that will solve this problem for a LONG time, I hope. LOL Since I was into "trying frying" mode, I fried a few things that I personally never had fried before. For example, sliced cucumber, sliced apple, and sliced pickles. I'd eaten that in my life (I think) but never tried to fry it personally. 

Photo 1 is of all the various fried foods together in a container lined with newspaper and paper towels to absorb some of the oil.
Photo 2 is some of the homemade potato chips and homemade dip. Wonderful combo!

I have to say that this was absolutely out-of-this-world to me. The various items fried all had their own distinctive flavor and were tender, though crunchy from being fried and just plain good! Nope, I can't do that again for a long time!

HEALTHY, HEALTHY, HEALTHY

And DELICIOUS, too!

Someone "shared" some delicious veggies with me and I have experimented with cooking "new to me" dishes. Some of this I wouldn't find in the grocery store that I shop in or it would just flat be too expensive to buy. Also, this was my first time to even hear of some of it so without the share package---I probably wouldn't have "tried" it, simply because I didn't know what it was. LOL

I posted a meal on my blog on March 17, 2014, telling how I prepared the veggies. Today, I did this:

I placed 2 (frozen) fish fillets and the asparagus in a medium sized, oblong, baking dish.  I added a very small amount of olive oil. Just about 1 teaspoon or so. I usually only spay the dish but I wanted enough today to  LIGHTLY coat the asparagus and fish.  I placed saran wrap over the dish and punched about 4 times with a fork (to vent steam). Placed in microwave and cooked at 2 minute intervals testing each time to see if fish was flaky and if asparagus was done. I'd never done asparagus in the microwave before so I wanted to be SURE it wasn't overcooking.

I had the ingredients already chopped in food processor for the rice dish I blogged on the 17th. I chopped enough that day to have leftover, chopped veggies that I could have left for this raw salad. You will want to look at that blog

I used part of a sliced Roma tomato as a finishing touch. 

For the sauce/dressing:

1 T. olive oil

1 t. spicy mustard

1T. lemon juice

ground black pepper and other seasonings of choice

small dab of red pepper

Mix and add to food, as a topping. 

Amazingly good, amazingly nutritious!

Late Night French Toast

Late night French Toast!
One night, not long ago, I wasn't sleeping all that well. I think I was hungry and that was part of the reason I couldn't sleep that night (after a 14 hr. fast for blood tests). I avoid late evening/night meals, usually. 

For French Toast;
1 egg combined with milk (or you can use water), beaten
2 slices wheat bread
Heat skillet on top of stove, with a small amount of olive oil. Dip bread in egg/milk mixture to cover entire piece of bread. Place in skillet. Repeat with other piece of bread.
Pan-fry both sides until brown (low to moderate heat). 
Remove to plate, add syrup, a small sprinkle of powdered sugar. I used Karo syrup and also sliced a strawberry or two to add on top.
I certainly don't want to crave this too often or late at night but it's a real treat sometimes!

Sneaky broccoli, mixed veggies, and tuna

Sneaky Veggies! Sometimes, I almost have to even fool myself. LOL I try to encourage myself to "play around" with food and therefore eat healthier. 

I cooked the rice and frozen veggies together in a rice cooker. I chopped usual onions, etc. to add to tuna. I also chopped a little bit of fresh broccoli to sneak in a little more nutrition.

Microwave baked fish and potatoes, with sliced tomato

Microwave baked fish and potatoes, with sliced tomato. 
As you know, I am all about easy, fast cooking. I am not able to stand in the kitchen stirring things all day. Nothing against those that are interested in gourmet cooking, the longer route around.
I simply placed:
1 piece of fish in glass container 
1 or 2 white or red potatoes, cut in pieces and placed in same container as fish
Added some chopped some green onion and sweet, green pepper, and black pepper
 Topped the glass container with saran wrap (punch a few holes in saran wrap with a fork)
Bake in microwave for about 9 minutes
Test to see that fish flakes easily
Slice tomato, add pepper and other spices of your choice, and serve.
One thing I like about this is that it is not messy, using a lot of containers, and it is quick, easy, healthy (for me), and delicious.

Hot Dogs and Veggies Quickie Meal

Hot Dog Lunch--with veggies! Microwave cooking!
 Easy as pie, quick, and tastes great.
15 minutes from start to finish--includes the 9 minutes cooking time, too. Oh, and the hot dogs were frozen!

I used:
1 package Hebrew National beef hot dogs (frozen)
2 medium potatoes, cubed, quartered, or pieces LOL as you like
1/2 medium onion, sliced
1 1/2 quart glass casserole dish
Piece of saran wrap to cover casserole during cooking

Place hot dogs, cubed potatoes, and onion in casserole. Sprinkle with pepper and/or seasonings of your choice. Cover with saran wrap, punch about 6 places with a fork in the saran wrap (for venelation), and place in microwave.

Turn on Microwave (I did full power) for 5 minutes. Check after 5 minutes (check to see if tender) and continue cooking for about 4 more minutes. I allowed this casserole to sit for about 5 more minutes after cooking. Be careful when removing saran wrap for any steam, which will be hot. 

Serve on plate with sliced tomato and/or any veggies you desire.

Tutti Frutti Salad

Almost dessert! Enjoying my first taste of watermelon this year. I cut watermelon, peaches, and pineapple into bite sized chunks. I used canned peaches and canned pineapple. Delicious and Nutritious! :)
